The price and the drawings
A fixed price is tied to a fixed set of drawings and a written specification. If it is drawn or written down, it is included.
When the price can change
Changes you ask for, and ground conditions nobody could have known about, are costed in writing before work starts. Nothing is added to your bill without a signature.
Ask every contractor for their change procedure before you sign.
